In addition to all the many types of manna, I recently found another very interesting idea on the Internet: sugar-free manna. I liked this idea right away! After all, usually there is a whole glass of sugar in recipes. But how can we do without it?
Very simple! As it turned out, this cake can be made useful (well, or at least not harmful to the body), and baked without a grain of granulated sugar. The idea is simply brilliant: raisins and honey give the cake a sweet taste. I, of course, went even further in the experiment.
In the original recipe, manna was baked in one large cake. And after baking, it was soaked in honey. I was curious: what if you don't soak it with honey? But it would be cruel and risky to completely deprive household members of sweets :) And I decided to bake a lot of mini-manniks, leaving several of them without impregnation - for my beloved.
Armed with a dozen silicone cupcake molds, I began my experiment. If you wish, you can either follow my example or bake one big cake - the choice is yours.
To prepare healthy manna without sugar, you will need the following ingredients*:
kefir - 1 glass ( i have 3.2% fat)
semolina - 1 glass
eggs - 3 pcs.
soda - 0.5 tsp.
salt - 1 pinch
seedless raisins - about 100 g
zest of 1 lemon
honey - to taste
* The glass in this recipe is 250 ml
Complexity: minimal.
Time for preparing: about 1 hour.
Pre-soak the raisins, pour boiling water over and leave for a couple of hours. Then we rinse, sort out (if necessary) and dry.
Combine semolina with kefir, mix and leave to swell for 1 hour.
Add salt to the eggs and beat.
Add eggs to semolina with kefir, mix.
Add finely grated lemon zest and soda, and mix again.
Roll the dried raisins in flour (so that they are more evenly distributed in the baking) and add them to the dough last.
Grease the baking tins with butter and lightly sprinkle with semolina.
We put the dough in them, filling in half, or two-thirds. But nothing more, since during baking the manna will rise!
We put the forms in the oven, preheated to 180 degrees for 40 minutes.
Note that for one large manna, the baking time should be increased. But since my molds are small, they bake faster and faster.
While the baking process is in progress, let's prepare honey for soaking. I have it very thick, so I diluted it with water at room temperature (1: 1).
We take the finished manniks out of the oven and immediately soak them with honey. After that, be sure to let them cool down.
Fruit and berry pies are especially popular. This is both food and dessert at the same time.
They are delicious, juicy and sweet. But there are categories of people who, for various reasons, limit sugar in the diet. What's a sweet cake without sugar?
It turns out that anything is possible. For example, everyone's favorite and common charlotte.
Indeed, a very easy-to-prepare apple pie. It does not require a lot of products, hassle, it always turns out tasty and aromatic.
And just such a sweet cake can be made without adding sugar.
The best sugar substitute without disturbing the taste is honey. For those who observe a slim figure and limit the use of flour, some of it is replaced with oatmeal.
Ingredients
✓ half a glass of flour;
✓ half a glass of rolled oats;
✓ eggs - 2 pieces;
✓ half a teaspoon of baking soda;
✓ two tablespoons of honey;
✓ apples - 3-5 pieces.
Preparation
First you need to cook the apples. Remove the seeds and stems from washed and dried fruits. Then cut into wedges. Everyone chooses the thickness of the slices to taste.
Place the chopped apples in a bowl with honey. If the honey is candied, then melt it first.
Mix the mass well, you can add vanilla, cinnamon to taste. Leave to soak while the dough is preparing.
Break the eggs into a deep container, be sure to dry and cool. The eggs should also be cold by their refrigerator.
Beat eggs with a mixer or whisk until a thick, high foam is formed. To do this, add a little salt before whipping.
Continuing to beat, add the flakes little by little. Next, add soda or baking powder to the resulting mass and gently mix with a wooden spatula from the bottom up so as not to knock off the foam.
Prepare a baking dish. You can use a special one with split edges, you can use a cake pan, or you can just use a non-stick frying pan without a handle, wide and deep enough.
Grease the form with margarine or unrefined vegetable oil (very little fat is well distributed over the entire surface of the bottom and sides, so that no dry areas remain).
And now sprinkle with semolina or breading mixture. It is better to use just such sprinkles than flour, since the flour, having soaked very quickly, will become part of the dough and may not give the desired effect.
Then pour the dough into the prepared mold, put the apples on top, pour over them with honey, in which they were soaked.
And send it to the oven, preheated to 170 degrees. Leave to bake for about half an hour.
As soon as the charlotte is browned, pierce it in the thickest place with a match or other wooden stick. If the stick remains dry, the cake is ready.
Take it out with baking mittens and shake it a little. The finished charlotte will immediately move from its place by itself.
Cool the pie and then put it on a dish.
Another sugar-free charlotte recipe is very similar to the first, but it turns out to be more satisfying and lush. The fact is that the dough contains kefir.
The rest of the ingredients are the same. The cooking procedure is also similar. The difference is that when kneading the dough, some honey is added to it. The rest of the honey is also soaked with apples.
Charlotte is laid in the same way. First the dough, then the apples and honey.
The dough on kefir with the addition of honey will be more fluffy and rich, and when baked, it will double in size.
Due to this, the fruits laid on top seem to drown in the rising dough, and you get a single mass of the pie.
You can also cook charlotte not only without sugar, but also without flour - the dream of losing weight ladies. In this recipe, flour will be replaced with semolina.
Semolina, as you know, swells in liquid when heated, so it is required for a pie several times less than the same flour.
Ingredients
✓ a few apples, better tough and juicy;
✓ a glass of semolina;
✓ a glass of kefir;
✓ one egg;
✓ three tablespoons of honey.
Preparation
Knead a dough made of semolina, flour, eggs, kefir and honey, which is liquid, like sour cream.
You can add half a teaspoon of baking soda or baking powder.
Pour the chopped apples or pears into the dough and mix until they are evenly distributed throughout the mass.
Pour the resulting dough with fruit into a mold prepared in a known way and bake in the same way as the previous options.
And one more recipe for charlotte, but without honey, and completely without sugar.
Ingredients
✓ 4-5 apples;
✓ half a glass of flour;
✓ a glass of cottage cheese;
✓ half a glass of kefir;
✓ two eggs;
✓ ghee 100 gr
This recipe is a little more difficult to prepare, but the result is worth it.
Preparation
Fry the chopped apples a little in ghee for about five minutes.
Knead the dough from the rest of the ingredients.
Put the fruits in the prepared form and pour the dough on top.
Bake the pie for about 25-30 minutes at 170-180 degrees.
Remove from the mold when cooled.
Instead of sugar, you can use not only honey. For people with diabetes, stevia can be used instead
Ingredients
✓ half a glass of natural yogurt, possible with the addition of berries or fruits;
✓ 1-2 tbsp. spoons of stevia
✓ 6 tablespoons of bran, better than oat or wheat;
✓ a few apples or pears.
Preparation
Mix yogurt and bran in a container, add stevia
Beat eggs until frothy and add to mixture.
Put the prepared chopped fruits in a greased and sprinkled baking dish. Spread them evenly over the surface.
Pour the dough evenly over the top.
You can shake it a little so that the dough is distributed over and among all the apples.
Place in the oven at 170 degrees and bake for about half an hour.
All charlotte recipes are about the same. And it doesn't matter whether you put the fruit first and then the dough or vice versa, but it can completely mix all the ingredients in one container.
This is a matter of the beauty of the cake itself, not of its essence.
Some housewives do this: first spread half the dough, then all the fruits, then the rest of the dough. There is a lot of room for creativity.
The main thing is that you can replace sugar with other sweet, but not harmful products, even flour can be partially or completely replaced.
And the principle of making apple pie remains the same.
Charlotte with semolina and kefir will resemble manna, only lighter and less rich in composition, but not to taste. Having decided to exclude harmful products, you can indulge in delicacies and desserts.
If you need to limit the use of sugar for any reason, then you can bake a wonderful sweet cake without adding it. Charlotte will not become less tasty, but it will be healthy and light.
And when preparing recipes without flour, it is also low-calorie.
Using cottage cheese will help give your favorite pie a richness without unnecessary calories.
So the diet can be delicious.
Enjoy your meal!
With the onset of autumn, many housewives remember the wonderful apple charlotte recipe, which has not lost its popularity for many years.
The classic was borrowed from English cookbooks. The modern recipe is slightly different from the original. Initially, the pastry looked like airy apple pudding topped with various sweet sauces. For example, in Germany, charlotte was baked from ordinary bread with the addition of fruit mass and butter cream. This recipe still exists and enjoys a certain popularity. Over time, all apple pies on biscuit dough began to be called charlotte.
In our time, chefs have simplified the recipe as much as possible. It has become more affordable, but because of its calorie content, some housewives are forced to refrain from such baking. Then the ingenious pastry chefs proposed several dietary options replacing some of the ingredients.
If you use a calorie calculator, it is easy to find out that a hundred-gram slice of sweet dessert contains 200 kcal. In order to reduce the calorie content of any flour product, you need to replace fast carbohydrates (sugar, flour) with more "calm" ones. For example, honey and stevia are good analogues for sugar. Even diabetics are allowed these ingredients. Dried fruits can also give additional sweetness. Sugar-free charlotte with apples, pears and dried fruits will look no less attractive.
Next, consider an ingredient such as an egg. According to the recipe for a pie, you need 5-7 pieces of them, from the point of view of dietetics, this is quite a lot. But a way out was found. You can add only proteins to the recipe, and then the calorie content will significantly decrease, and the biscuit will still rise well.
You can reduce the number of eggs by using baking powder or soda quenched with lemon juice. These ingredients will provide a good height for the biscuit.
Charlotte without sugar and yolks is a very real thing. But what about flour? It is practically the main ingredient in the dish. Experience shows that it can also be replaced. For example, so that charlotte with honey and apples without sugar does not lose its taste, you can replace wheat flour with rice or buckwheat. It will also be appropriate to use It is not necessary to completely exclude wheat flour, you can replace some of it with healthy foods rich in fiber and vitamins.
Butter can be omitted from the recipe altogether. No one will notice the absence of such a product. You can add fermented milk products such as kefir to the dessert. To lubricate the mold, it is preferable to use vegetable oil and generously dust the surface with semolina. When working in the kitchen, imagination and common sense are very useful. With the help of such qualities, any, even an inexperienced, hostess will get a charlotte with apples without sugar, the recipe for which will be begged by grateful guests.
The main indicator of a quality charlotte is a well-beaten, tall biscuit. In order to achieve perfect results, the ingredients must be mixed in a specific sequence. Considering that some products have been replaced by low-calorie ones, the cooking technology will be as follows. The first step is to separate the yolks from the whites. Everyone does it as best they can. It is recommended to take eggs out of the refrigerator as chilled whites tend to whisk better. Our recipe is called "Charlotte without sugar", but the sweetness should still be in the dessert, so we boldly combine the protein with honey and start whisking at maximum speed for at least 10 minutes.
Next, we just have to add the wheat flour substitute. This is done carefully so that the squirrels do not lose their magnificent appearance. You need to knead flour with a spoon, the mixer is no longer useful in work. The result should be a mass that looks like a thick pancake dough.
Dosages:
As you know, fruits also have different calories. Charlotte without sugar will turn out to be most useful if you use sour apples as a filling. The Antonovka variety is ideal for this. Such fruits have a fairly dense structure and look aesthetically pleasing in the finished cake.
Pears can also be used in dessert, but they must first be darkened in a pan. This applies to hard green varieties.
In order to use dried fruits as a filling, they must also be prepared in advance. Well washed fruits are poured with boiling water and left to cool down completely. Then spread the fruit on a towel and remove excess moisture. If this is not done, the bottom of the cake will be too wet and will not bake properly.
Fruits with seeds and tender pulp should not be used as a filling. It is also worth recalling that when preparing apples and pears, the peel must be peeled off. To prevent the prepared fruits from darkening, while waiting for pouring, they can be dipped in slightly salted water, and dried with a towel before laying.
The prepared batter is poured onto apples and dried fruits laid in a mold and baked at a temperature of 200 degrees for 20 minutes.
As you know, honey is most safely absorbed by the body and is allowed in certain proportions in the diet. You should also be aware that during heat treatment this product changes its properties and partially loses its benefits. Therefore, you need to carefully replace sugar with honey. You can add stevia or fructose to a recipe.
Kefir charlotte without sugar turns out very tasty. Fermented milk products are added to slightly dilute the coarse fiber of buckwheat or oat flour. This should be done as the flour is manually kneaded. According to the classic dessert recipe, you will need 100 ml of kefir. This ingredient adds a slightly perceptible creamy flavor to the cake and partially functions as butter.
You can also make a diet charlotte with cottage cheese. This product will partially replace flour. Naturally, the cottage cheese should be fat-free. This ingredient is added to the dough while manually kneading the flour. Each housewife determines the dosage to her taste.
Now you know how to make sugar-free charlotte. The recipe for this dessert is in the article.
There are many foods that can help you maintain weight loss. Getting the full benefit of this kind of food requires a careful approach. It helps eliminate potential mistakes and frustration.
Products and drinks obtained from milk as a result of fermentation with lactic acid bacteria are recognized as extremely beneficial for the body. There are two main reasons for this: the significant calcium content and the ability to normalize the intestinal microflora and digestion in general. Indirectly, these properties contribute to weight loss.
- a classic fermented milk drink. It saturates perfectly, and this is with a maximum calorie content of 56 kcal per 100 grams.
Note. Nutritional information is based on a 3.2% fat product. Indicators may vary slightly from manufacturer to manufacturer.
The recommendations of nutritionists are almost identical. There are no contraindications to use. Only people with digestive disorders and serious medical conditions are advised to consult a specialist doctor.
How many kilograms will "go away" thanks to kefir? Everything here is individual. The initial situation and the presence / absence of other measures taken to lose weight are important.
However, many people do not like its bland taste. So the question arises: if you drink kefir with sugar for weight loss, will there not be a negative result or even harm? This is important to understand.
Many will say: this is the purest carbohydrate, where can there be any benefits for weight loss? People who have already figured out the concepts of "fast" and "slow" carbohydrates answer a little more specifically. Something like this: those who are losing weight are strongly advised not to eat foods with a glycemic index greater than 40.
For reference. The GI of refined sugar is 70 units, cane (brown) - 55.
Still, most of us needn't worry too much. Not diagnosed with diabetes (of any type)? Don't you sit on? In this case, one or two teaspoons of sugar in a glass of kefir will only sweeten it, and will not bring harm. There are some nuances that require attention, but more on them later.
Is there any special recipe? No, and given the simplicity of the ingredients, this is not surprising. It is important to remember that you cannot drink kefir if its temperature is below room temperature. Cold liquids are harmful to digestion, and the desired effect will not work.
Heating should be natural, without the "participation" of the stove or microwave. The only permitted alternative is a container with warm water not exceeding 40 ° C, in which you can put a glass or mug.
Should you drink exclusively low-fat kefir? No, here you can afford the one you like best. Milk fats contain acids important for the body, and therefore are safe. Moreover, the desire to consume only low-fat foods impoverishes the diet.
The first two effects are clear, the third is generated by sugar, which can provoke fermentation processes.
Have you felt side effects on yourself? There is only one advice: postpone the use to another time. This can be something like a pre-breakfast or a snack between key meals during the day.
For those who did not have negative feelings, there is also some advice. Remember that drinking kefir with sugar at night does not mean making such a cocktail right before bed. It is recommended to maintain a half-hour interval.
Fasting days
No less popular than the daily intake. General recommendations are simple: once a week in a relaxed atmosphere. The approximate volume is two liters, the amount is adjusted up / down by the needs of the body and feelings of hunger.
