Meringue cookies are baked very quickly, for the preparation of which flour is not needed.
You can cook an unusual meringue with sunflower or pumpkin seeds.
Ingredients:

- granulated sugar 1-1.5 cups

Preferably a yeast-free puff. Such cookies can be both sweet and salty, depending on the filling. For example, you can cook cookies with sesame or cumin for beer: roll out the defrosted dough to a thickness of 0.5-0.7 cm, cut it into elongated pieces or squares with a knife, or better with a special wheel, as you like, brush it with a beaten egg or a mixture of eggs and milk and sprinkle on top with zira or sesame seeds mixed with coarse salt. Stir the sugar with the egg until white, put the vanillin, add sour milk or sour cream, stir again. When baking, the dough sheet will be solid, but the lines of the squares will remain, and it will be easy to simply break the cookies into portions along them. Prick the prepared cookies with a fork.
Bake at 180-200 degrees.
Instead of vanillin, you can use grated lemon zest, raisins also do not hurt.
These cookies can be baked even from flour with not very high gluten.
This recipe has been known to me for 30 years, and it helped me a lot just when it was not possible to buy good flour.

Let's knead the dough. Roll out the finished dough with a layer of 0.7-1 cm on a table dusted with flour and cut out cookies with cookie cutters. We cover the baking sheet with parchment and put the cookies on it, after dipping them in sugar with the top side. You can use a mixture of sugar and cinnamon. Bake at 200°C for about 15 minutes.


Unusual and delicious pastries, cookies in haste from such a dough are made as follows:
- 300 g margarine or butter
- 3 cups flour
- 25 g fresh yeast
- 1 tbsp. tablespoon sugar + sugar for sprinkling
- 0.75 cups of milk
Grind the flour with margarine, dilute the yeast in warm milk, putting a tablespoon of sugar in it. Let the yeast froth and pour in the flour and butter. Add a little more flour, if necessary, so that you can knead a soft dough.
