Although this is easily explained, firstly, months ahead are rich in holidays and today's recipe is sure to come in handy, and secondly, I prepared it for the New Year (as well as in the past, and the year before last, and in .... years 😉) but because I have fresh photos, fresh reviews and fresh comments on the recipe.

I advise today's article not only to novice hostesses, but also experienced ones, since I myself prepared a fur coat for the hundredth time and going to make it in the 101st I read a way to make it even tastier. At the same time, the herring under the fur coat retained the classic recipe and layers, the sequence of which remained the same as we love.
As always, I will first give a short recipe for cooking, and in a step-by-step I will write down in detail what needs to be done additionally.

- Herring - 1-2 pcs.
- Beets - 3 pcs.
- Potato - 2 pcs.
- Carrots - 1 pc.
- Onion - 1 small
- Eggs - 3 pcs. (1 of them for decoration)
- Mayonnaise
- Black pepper
- Vegetable oil
Boil beets, potatoes, carrots and eggs, cool, peel. Peel the herring and cut into small cubes. Finely chop the onion.
Lay out in a salad bowl in layers: potatoes, herring, onions, carrots, egg, beets. Spread with mayonnaise. I repeat the layers again.
Now in more detail.
If you take such a ratio of products as I have written, then the “coat” will be with a slightly sweetish flavor due to a rather large amount of beets (but we love this). If you take beets less, and more potatoes - the sweetness will go away, try to your liking.
Boil vegetables (except onions) over low heat: cook carrots for about half an hour, potatoes for about 45 minutes, beets for an hour and a half, depending on size. We do not forget that
We put the vegetables in boiled water, because we need them to be tasty, and not the water in which the vegetables are boiled.
All cooked, set to cool.
During this time we will prepare a herring. The last time I tried to make with a vacuum packed already chopped and without bones, I must say too well especially the herring in these packages already with salt and vinegar, that is tasty.
This time I bought a Matyas fillet for 300 grams, it turned out to be just as many as needed. Cut the fillet into small squares.
Peel and rub the vegetables on a coarse grater. It’s most convenient to make this salad in a salad bowl with high sides, but it so happened that I put everything in a herring, to put a fur coat in it is still that task, but what to do is what a traditional herring under a fur coat looks like for me))
Now about what I would like to pay special attention to.
A few years ago, I came across advice that grated vegetables should be salted and add a little sunflower oil to them. I tried it and, indeed, it turned out to be tastier, at least for this New Year’s one of the first to eat herring under a fur coat.
To do this, grate the potatoes in a separate plate, salt it, slightly pepper and add a little, somewhere with an incomplete tablespoon, odorless vegetable oil.
Gently mix with a fork (so as not to spoil the "airiness").
I taste, if something seems a little, I add.
Add a little salt and sunflower oil to the beets.
I just pepper the carrots a little.
If the herring is not “matias”, but a whole fish, it is not too salty, I would say that it is even tasteless for this salad, so you can add a little sunflower oil and a little vinegar to cut the herring into pieces.
The question that is most often asked when preparing a fur coat is about layers. Herring under a fur coat, its classic recipe, has layers arranged in the following sequence: - herring; - bow; potato; carrot; - beetroot, in this embodiment a “fur coat” is obtained over a herring, so a “fur coat” is real.
But at this point I retreat from the recipe, try it, maybe you will like it more too.
Now we coat with mayonnaise on top. In general, it is recommended not to smear, but to wait until the mayonnaise spreads out and spreads over the salad, but it never works out for me, usually I don’t have enough time, besides, I take the mayonnaise bold and to have it spread it must be angelic patience)) Therefore, I mayonnaise gently smear with a spoon.
In principle, this can be stopped, but we are not looking for easy ways)) so I am building another layer, it seems to me more elegant and tastier.
Usually I prepare this salad in advance and set it to soak in the refrigerator for the night.
The next day, it remains only to bring beauty. You can cut vegetable flowers and leaves, you can sprinkle with fresh herbs, I decorate with a grated egg.
What else do I want to add. I offered to make a salad “Herring under a fur coat » classic version, in which the recipe is with an egg, but often it is prepared without eggs, while absolutely without compromising on taste. So do not like eggs - feel free to remove them from the recipe. I tried to cook like that, but returned to the usual version, I personally like it more.
A sectional view of a fur coat is probably not the most aesthetic, but it is bright, colorful and mouth-watering.
And further. I tried the most delicious “coat” from my work colleague, and the secret of the “taste” turned out not to be in the products and not in their special location, but in the fact that she used a hand grater when chopping vegetables, I think from Mulinex. Rubbed directly into the salad bowl, the layers were more voluminous, fluffy and better impregnated. So if you have a similar device in your arsenal, be sure to use it.

Salad “Herring under a fur coat” is a traditional dish, without which it is difficult to imagine any kind of holiday. Without it, even with Olivier, it’s as if the table is empty. But various modifications of this salad have already gone, for example, with the addition of eggs. We take five of them, but only three go to the salad, the remaining two are used as decoration.
Take small-sized vegetables, it’s easier to adapt to the proportions. By the way, perhaps you are lucky and know where the herring fillet is sold near you! Then you will reduce the time for preparing the salad.
Ingredients:
We clean and chop the herring. Try to remove all the bones.
All other boiled foods should be grated and put in different containers.
The plate on which you plan to spread the salad, pre-grease with mayonnaise.
The first row or layer is pickled onions. It was cut in advance and filled with 1 tablespoon of vinegar and 1 tablespoon. Sahara. After half an hour, the onion is ready, drain the liquid.

We did not put herring in it, because we will cut it portionwise into each piece of pita bread with salad.

Here we have no carrots, no onions, no eggs. Make a simpler variation of the salad. But he still turns out very nutritious and tender.
Each product can be separately mixed in plates with mayonnaise or sour cream, so that it is more convenient to spread and spread on the surface.

First mix grated beets with mayonnaise.
Second row: grated cheese and mayonnaise.

So, to the diluted gelatin you need to enter all the mayonnaise that you plan to spend on the salad. And then add to each crushed product a few tablespoons of this gelatinous mixture.
Ingredients:
Pour gelatin in half a glass of cold water for swelling.
Pickle the onions in advance in a solution of water with 1 tablespoon of vinegar and 1 tablespoon of sugar in advance.
Grind or juic all boiled vegetables.

Three potatoes with the first layer and evenly distribute along the bottom of the dish around the glass. This layer is slightly salted, we will not salt all the rest.
