To prepare her signature charlotte, Julia offers the following ingredients:

1 cup flour, 1 cup 1% kefir, 4 pcs. apples, 100 g butter, 1 packet of baking powder, 2 pcs. eggs, 1 cup sugar, ground cinnamon to taste.

Cooking time is 1 hour 20 minutes and is divided into four stages:

STEP 1

Softened butter mix with sugar, beat eggs, mix thoroughly.

STEP 2

Pour non-cold kefir into the mixture, mix until smooth, add the sifted flour mixed with a baking powder. Knead the dough, it should turn out a little thicker than the pancakes.

STEP 3

Rinse, peel and dice apples. Grease a form for charlotte with butter, pour part of the dough, lay apples, sprinkle with cinnamon. Pour on top with the remaining dough. Garnish with apples on top as you like best. Sprinkle with cinnamon.

STEP 4

Put charlotte in an oven heated to 180 ° C, cover with baking paper, bake for 25 minutes, then remove the paper and bake for another 20 - 25 minutes. Pierce the finished cake with a stick. It should be slightly damp. When the cake is ready, turn off the oven, open the door and let the charlotte cool down a little, sprinkle with powdered sugar and serve. Have a nice tea party!

Charlotte without eggs: The secret of cooking delicious with apples or ribbons


Sometimes it may happen that you decide to cook charlotte, but there are no eggs that are necessary for the test. But it turns out that you can make a delicious pie without them.

Of course, it is impossible to get a magnificent dough without eggs, but they can be replaced with dairy products.

One eggless recipe for charlotte contains the following ingredients.

500 g apples, 1 cup flour, 1 cup kefir, 1.5 cup sugar, 10 g vanilla sugar, 0.5 cup vegetable oil, soda, vinegar, salt.

Making charlotte according to this recipe is practically no different, with the only difference being that you do not need to beat the eggs. Pour kefir into the cooked dishes, salt to taste and add the flour. Next, add sugar, vanilla and vinegar slaked with vinegar or baking powder. At the very end, pour the vegetable oil and mix thoroughly.


In the prepared form, spread the chopped apples and pour the dough. After that, put the cake in the oven for 40 minutes.

Cooking charlotte on a baking sheet is not time-consuming. The only difference is that you put the dough with the filling not in a special form (usually it is round, and therefore the cake is round), but on a baking sheet. That is why the finished charlotte is obtained in a rectangular shape.

Try to cook delicious charlotte according to this recipe:

1 cup flour, 6 eggs, 1.5 cups sugar, 1 orange, 5 apples, 600 g apricot, 100 g dried fruit, 100 g butter, 1 tsp. vanilla sugar, 1 tbsp. l starch, soda and cinnamon.

We prepare such a charlotte as follows.

We take the eggs and separate the proteins from the yolks. Add 2/3 cups of sugar, soda and vanilla to the proteins and mix well. Add sugar to the yolks the same, only the remaining third and beat until foam. After that we combine the yolks with the proteins and again we beat everything well with a mixer.

Pour the flour and mix. Add the zest of orange and dried fruit, mix again.

Separately cut apples and apricots into slices. We mix apples with cinnamon, and apricots with starch.

Take a deep pan and grease it with oil.


We spread apples in one layer, and butter on top. Spread the next layer with apricots and sprinkle with sugar.

Fill everything with the prepared dough and send the cake to the oven for 40-45 minutes. The readiness of the pie can be checked by piercing it with a toothpick. If it is dry - charlotte is ready and you can pull it out, cool and proceed to tea drinking.

On this occasion, there was even a joke that the wives of German bakers save so much on everything that pies are made from crackers. The wives themselves were called Charlotte for their eyes, because this name was so popular that it became a household name for all German women living in Russia (compare: Yankees are Americans, Fritzes are Germans).

The first - eggs are not beaten well enough. The second - flour is mixed into the dough with a mixer. Surprised that everything is so simple? How to cook a lush charlotte with apples in the oven

There are two ways to beat eggs with charlotte sugar. One is simple, the other is accelerated. A simple method involves standing with a mixer for a long time over a bowl of eggs and sugar, waiting for the mass to not triple in volume. If you have a Nordic character, then do just that. If you want to speed up the process, as most confectioners do, then do this. Take two containers. And separate the yolks from the proteins. Squirrels send to a larger bowl, the yolks can be beaten even in a glass.


Add a third cup of sugar to the yolks and break them down with a mixer or blender (it doesn’t matter) to a homogeneous light yellow mass.


Next, we are taken for proteins. Beat them first without sugar until such a state as you see in the photo. Then we fill in all the remaining sugar, as well as vanilla sugar, and whisk until white. I use vanilla to prevent charlotte from smelling like eggs.


Set aside the mixer. We spread the yolks in the protein mass, mix with a spoon. See what bubble structure you got? It is thanks to her that the charlotte will become magnificent.

Now it remains to put flour. And here it is very important in no case to combine flour with eggs with a mixer. Flour cannot be whipped - otherwise it forms a lot of gluten, which will turn charlotte into a rubber product. Our task is completely different. You need to mix the flour with an ordinary spoon, movements from the edge of the bowl to the center.


Put the finished air dough into the mold. If the coating is non-stick, do not lubricate. If the shape is like mine, then grease the bottom (or better cover it with baking paper). You can’t lubricate the sides - otherwise the finished biscuit will “slip” from them after baking - and the charlotte will settle.


Wash apples, dry and cut into arbitrary slices. (Do not forget to remove the core with seeds.) Peel apples or not - decide for yourself. I don’t peel and cut apples into large slices.


Spread them on the dough.


And mix lightly so that the apples are covered with dough.


All shallots can be put in the oven. Another important point. The temperature in the oven should not be high! 150 degrees maximum. This rule applies to any biscuits - they need time to bake in the middle and not burn out outside. Charlotte is baked for about 1 hour. Baking time depends on the oven. Check for readiness with a wooden stick or toothpick. Pierce the charlotte in the middle, if there are no traces of dough left on the stick, you can remove it.

To ensure that charlotte is not guaranteed to fall, hold it upside down above the wire rack, without removing it from the mold, until it cools down. Then draw a spatula around the edges of the mold and remove it onto the serving plate.

The apple season is starting! In all gardens, the amazing aroma of ripe apples is heard. July thunderstorms and wind knock them off the branches every now and then, and in the mornings the garden is strewn with apples! Nothing that apples are still greenish and slightly nailed after a fall - they are perfect for baking the fastest and most delicious apple pie!

I was very surprised to find out that it was this, as I thought, simple apple pie, that turns out to be a classic charlotte! It is prepared amazingly quickly and easily, for which it is sometimes called a “five-minute pie”. Let's bake a lush and tender apple treat - one of my favorite types of homemade cakes!

Ingredients:

  • 3 eggs;
  • an incomplete glass of sugar;
  • incomplete glass of flour;
  • 1 teaspoon of soda;
  • 1 tablespoon of vinegar;
  • 5 - 7 - 10 apples (depending on their size).

That's all, as you can see, the set of products is minimal, and the pie is obtained for the whole family, because it is very magnificent!

How to bake:

The most time-consuming task in this recipe is to peel apples, which is what we will do first. After washing them, cut into quarters and peel the cores and peels.

Prepare a cake pan. It is best to take detachable, cover the bottom with confectionery paper and grease this paper and the sides of the mold with sunflower oil. Or grease with butter and sprinkle with breadcrumbs or semolina.

Well, this time I decided to try baking in a cast-iron frying pan - to find out how it works, because not everyone has detachable forms. I will say right away: if not, it’s worth buying - for such pies and biscuits. The cake fell to the bottom, despite being greased with oil, and in order to get it, prying it with a spatula, I had to torment 🙂

Cut the apples into thin small slices and evenly sprinkle along the bottom of the mold. Now you can cook magnificent dough without fear that it will settle while we mess with apples.

Beat eggs with sugar using a mixer, yolks from proteins, as for a biscuit, do not separate!

Beat a minute and a half, this is enough to get a lush, dense mass with bubbles.

Pour flour into a bowl, soda into flour, extinguish with vinegar and carefully, but carefully so as not to bring down the foam, mix.

Pour the dough onto apples, evenly distribute it with a spoon, and put the mold in a preheated oven.

It takes five minutes, though not 5 minutes, but still pretty quickly - 20 to 25 minutes, more than average on fire, closer to large. Just check from time to time with a wand so that it doesn’t turn out that the top is already burning, and the middle is still liquid. In this case, the fire needs to be slightly reduced, not sharply, so that the cake does not “sit down”.

After trying the pie with the skewer again, and making sure that it is dry, we remove the baked goods from the oven.

We wait until it cools down a bit, and remove the cake from the mold. It is convenient to turn it over onto the lid of the pan, and then from the lid onto the dish.

Cut the pie into portions - look how fluffy and magnificent it is! Sweet dough perfectly complements the sour taste of delicate baked apples. What you need for spiritual tea drinking!

... But what if you bake apple biscuit with chocolate? .. Pear chocolate charlotte turned out to be very tasty, we must try the apple option, the idea is tempting! 🙂

I baked this charlotte in a detachable form, greased with butter and sprinkled with crackers. And instead of soda and vinegar, I added a little soda (half a teaspoon) and a little citric acid (a pinch) to the dough. The result was a real apple biscuit, tall and lush! True, the apples remained below in the form of a thin layer.

So the next time I did it differently: I poured a layer of dough into the mold (about 1/3 part), then I laid apples on the dough and poured the rest of the dough on top. This option turned out to be the best: the cake turned out to be juicy, not dry like a biscuit, but wonderful apple! And another caveat: a little touch the apple layer with cinnamon. Just a little bit, and what a flavor it will be! ..
