Potato zrazy is a potato patty or stuffed roll. Potato zrazy are a dish of Lithuanian, Belarusian, Russian and Ukrainian cuisine.

We need:

  • 1 kg of potato peeled 700 g)
  • 1 kg of fresh cabbage
  • 1 pc medium carrot
  • 1-2 eggs
  • 3-4 tbsp flour
  • 20 g butter
  • 1 tsp tomato paste
  • 1/2 tsp citric acid
  • 1 tsp sugar vegetable oil for frying zraz and cabbage

Cooking:

1. Peel the potato from the skin, wash it and set it to cook until fully cooked. To salt. Drain the water completely and push over with a pusher or in a blender. Add butter, let cool slightly, beat in an egg. The number of eggs is regulated by ourselves. Salt and mix thoroughly.


It is not necessary to add eggs to the dough.

2. To get potato dough, put the flour and knead the dough, it should look like custard, but not stick to your hands. We try not to abuse flour, so as not to clog the dough. The amount of prescription flour is just right.

3. While the potatoes were boiling, chop the cabbage, put the stew in a pan with vegetable oil. Onion cut into small cubes and combine with cabbage.

4. Rub the carrots, on a medium grater, add to the cabbage, continue to fry. Salt the cabbage, add sugar, a little butter, mix thoroughly and cook further. If you want to give the cabbage sourness, add citric acid and tomato paste. Mix, continue to simmer until tender. Cool.


For the filling, you can use sauerkraut, then do not add citric acid and tomato, but add a little more sugar and tomato sauce.

5. We have the dough ready, the filling too, we proceed to the preparation of the zraz. On a chopping board, add flour and prepare a small bowl of water to wet your fingers.

6. Pour 2 tablespoons into the pan. vegetable oil and over medium heat, warm.

7. We form zrazy. They can be formed in two ways:

  • 1st — use a spoon to pick up the dough, roll it into the balls with our hands, put on the flour sprinkled surface. Then we take the ball in the palm of our hand, and knead the other to make a tortilla, put the filling on it, not sparing it, and sculpt the pie. Roll in flour, forming a cutlet.



  • The second of the dough we make a sausage and cut into equal slices, make flat cakes, and then, as in the first case.

8. Formed zrazy, put in a pan, fry on both sides, until golden. Carefully, with a wide spatula, remove and put on a paper towel, remove excess oil.

We need:

  • 700 g champignon
  • 1 kg of potatoes
  • 2 pcs large onions
  • salt, pepper to taste
  • semolina for breading
  • vegetable oil

Cooking:

1. Grind onions, fry in vegetable oil.

2. Shredded mushrooms, add to the onion, fry until the liquid evaporates. Salt and pepper.

3. From peeled and boiled potatoes we make mashed potatoes, salt, and pepper.

We need:

  • 500 g raw meat, any
  • 1 pc onion
  • salt, ground black pepper to taste

The meat filling is done in two ways:

  • Boil the first meat and chop finely, or pass through a meat grinder (blender). Add the minced meat, put pepper and spices, mix. Cut the onion into small cubes, fry in vegetable oil, if desired, add the grated carrots to it, add a little salt and stew. Mix fried onion with minced meat.
  • Grind the 2nd meat in a meat grinder with onions, salt and fry until tender. Pepper at the end, season with spices.

We need:

  • 200 g chicken liver (can beef)
  • 1 large onion
  • 2 tbsp vegetable oil
  • salt, pepper to taste

Cooking:

1. Cut the onion, very finely and set it to fry in a pan with vegetable oil.

2. Grind the chicken liver through a meat grinder, add to the onion and simmer until the liquid evaporates. Cool down.

  • 50 g boiled heart

  2. Let chopped onions in butter, add chopped mushrooms, then heat for several minutes and cool. Grate boiled eggs, salt, add to the mushroom mass and sprinkle with spices.
  3. Roll flat cakes of minced potato, in the middle of each lay a teaspoon of egg-mushroom filling. Pinch around the edges, give an oval shape, bread in breadcrumbs.
