Minced meat “Nest with eggs” is cooked in the oven, it tastes like juicy meatballs, however, since you don’t need to fry, you don’t have to worry about the notorious “bad cholesterol”.
The minced meat nests are made simply and quickly, they look appetizing, cute and original, in addition, the portions are rather large (the husband’s predictable reaction: “Finally I made the cutlets of normal size!”, But I asked for supplements anyway, because it’s delicious). Another plus of this dish is the absence of painful doubts that torment us during frying cutlets: have they been fried? When cooking in the oven, this question is automatically excluded from the list of relevant. In this recipe, we indicate the number of products per 8 servings - “nests”. If you need less, take half a portion or even a quarter.

Peel the carrots and grate on a fine grater.
Cut the slices of bread into crusts, break the crumb into small pieces and pour in milk, let stand for 10-15 minutes.
When the bread is soaked in milk, mix and grind with a spoon to a state of homogeneous mass without large lumps of bread. (If you make minced meat yourself, and don’t buy ready-made, you can break the bread together with crusts, soak in milk, and then pass through the meat grinder along with the meat).
Onions need to be peeled and finely chopped (if desired, you can also fry in vegetable oil until golden brown - then the taste of the onion will be less pronounced).
Put the minced meat, grated carrots, bread soaked in milk and chopped onions in one bowl. Mix everything thoroughly until smooth, adding salt and pepper during the mixing process.
Lightly beat 2 eggs with a fork, mixing the proteins and yolks, add the eggs to the ground meat mass and mix again.
Divide the resulting mass into 8 approximately equal parts.
Using our hands dipped in cold water (so that the stuffing does not stick to our hands), we form a “nest” from each part: first we make a kind of ball, then we flatten it slightly from two opposite sides to the shape of the patty and, pressing with our fingers, we make a recess - “nest” (see our video recipe!). We put the "nests" of minced meat in a deep baking sheet greased with margarine or butter or in a baking dish.
We carefully break and pour one egg into each "nest", salt a little bit and, if desired, pepper.
We put the baking sheet or mold in the oven preheated to 180-190 degrees (this is the average level of heating or slightly above average, so that the oven warms up, turn it on 10-15 minutes before putting the pan there). We put the baking sheet at medium height. Bake ours in the oven at the set average heating level of 40-45 minutes. Over the past 5 minutes, you can increase the heating to maximum (and if your oven has a grill and air circulation function - you can also turn it on), so that our "nests" from the minced meat are also browned. Then we get it out of the oven, put it on plates and serve. Potatoes of any kind (fried, boiled, baked, mashed potatoes), pasta, vegetables, rice or buckwheat are also not excluded as a side dish.

Tomatoes take solid, medium size. Do not experiment with cheese - take a proven, hard variety. It is better to refuse to purchase a cheese product.
Ingredients:
If you have goulash or a piece of pulp, wash and dry. Remove the film and cut the meat and lard into small pieces. Peel the onion and divide into four parts. Prepared meat, lard and onions, scroll through a meat grinder. If you have homemade minced meat, then chop only onion slices and combine with minced meat.
Release a fresh egg there, mix. Add coarse salt and pepper, mix again. Optionally, add a clove of garlic, passed through a garlic press.
Knead the meat and beat well, then the nests will be more juicy and tender. If the minced meat is sufficiently dense, pour a tablespoon of warm water and mix thoroughly.
Wash the tomatoes and put them on a towel to make the glass water. Cut into circles no more than five millimeters thick. Grind cheese with a coarse grater or cut into thin slices. Separate the required amount of meat mixture with a spoon or hand and roll up smooth balls. Make cutlets from them. Put finished products in a baking dish. If you bake the nests directly on a metal surface, flow of juice and its burning are not ruled out.
In each recess, place a tomato circle, slightly salt.
Put cheese on top.
Sprinkle a little with freshly ground pepper. Put the form in a preheated oven and bake for 45 minutes, maintaining a temperature of 200-220 degrees. Serve hot.

I cooked this dish for a family celebration. Ate all cleaned up. It seems nothing special, but I was pleased to hear compliments from the closest people about my culinary abilities.
Very juicy, tender cutlets, and mushrooms add a spicy touch. Yes, and on the plate it looks very nice.
. minced meat - 1 kg. But in the end I had minced meat left, so 700 gr is enough.
. egg - 1 pc.
. white loaf or loaf - a couple of pieces
. milk - 1 cup
. mushrooms (champignons or oyster mushrooms) - 300 gr.
. bulb onions
. mayonnaise
. cheese (I have mozzarella)
. salt
. ground black pepper.
The first step is to stuff the minced meat. Soak a loaf or loaf in milk. It’s good to stretch it. Bread will add fluffiness to our meatballs
Finely chop the onion. Part of the onion will go for mushroom filling. And for minced meat, I missed the onion in a blender.
Now mix everything in one bowl. Add the egg. Salt, pepper and mix well.
Cooking the mushroom stuffing for the filling.
Finely chop the onion and fry in vegetable oil (odorless).
The onion should become transparent.
Cut the mushrooms.
Add mushrooms to the onion.
Fry until cooked. Salt the pepper.
Roll a gingerbread man from the prepared minced meat.

Grease with mayonnaise or sour cream on top. This is how you like it. I used mayonnaise.
Grate cheese on a coarse grater.
Sprinkle grated cheese on top of the stuffed nest.
Place the prepared nests on a baking sheet, having previously greased it with vegetable oil and in a hot oven for 40 minutes at a temperature of 180 degrees!
